The flank steak comes from the forward rear of the steer, behind the plate. It is a lean and wonderful all purpose cut of beef that can be grilled, roasted, or broiled. Because it is an extremely lean cut of meat, we do not recommend that it be cooked past medium & to slice thinly against the grain.
