Beef is offered in increments of 1/8 and 1/4 of a steer.
Wondering how much you need? Simply put, 1/4 of a steer lasts my family an entire year, eating beef several nights each week. While the little guys don't consume too much yet, 1/4 is perfect for a family of 4 that has plenty of freezer space. If you're looking for a smaller quantity, 1/8 is a great option and can fit in a standard home freezer. When purchasing, increments are based on approximately 55 lbs. of beef. This means that you are purchasing the product for about $8 per pound.
All beef is dry-aged for 21 days to create the tenderness and quality that we strive for. Our beef cattle are raised on pasture ground & are supplemented with grass hay, along with non-GMO grain. We have found that this combination creates the dense marbling that so many, including ourselves, seek.
While humans come in all different shapes & sizes, so do cows. The approximate amount of pounds of each cut may vary, however, a typical 1/8 includes:
